rump, salt and pepper, garlic, lavender, lemon zest, onion, stock
roll rump in salt and pepper
make incision holes with knife. Push into hole garlic/lavender and lemon zest
seal roast of in pan
fry off onions
rump back into tray and add stock
place in oven 180 degrees for 2 hours
remove and rest
carve and serve with salsa verde
