Lamb Backstrap Recipe
Lamb Backstrap, salt, pepper, Olive Oil, Hummus, Lebanese Bread
Cube the meat into 2cm squares. Thread onto skewers.
Brush lamb with a little oil to stop the kebabs sticking to the pan or grill plate. Season liberally with salt and pepper.
Cook quickly over moderately high heat so that it browns well, but does not dry out.
Turn the lamb once only as it cooks. Check as the sides may need a quick browning to colour them.
Rest the lamb for a few minutes before serving to retain juice.
Serve with Lebanese bread and hummus.
