Forequarter Leg Boneless Recipe
Bunch of fresh rosemary, 1 x 2kg shoulder of lamb, Olive oil, Salt and freshly ground black pepper, 1 bulb of garlic, peeled and quartered
Preheat your oven to 240 degrees
Cut into the fatty side of the lamb all over with a sharp knife and rub olive oil over the lamb.
Dot with rosemary sprigs, garlic cloves and season with salt and pepper.
Place it in a baking dish and cover with tinfoil and place in the oven.
Turn the oven down immediately to 180°C and cook for 4 hours.
Remove the lamb from the oven and place it on a plate. Cover it with tinfoil, then a tea towel, and leave it to rest for 15 minutes. Serve with roast potatoes, carrots and beans.
