Lamb Rump Recipe
4 lamb rumps about 200g each, 2 cloves crushed garlic, few sprigs fresh thyme, 1 tbsp chopped fresh mint
Preheat oven to 200 degrees.
Combine garlic, oil, mint and thyme in a small bowl and brush over rumps. Season with salt and pepper.
Place the lamb rumps on a rack in a roasting dish. Roast for 15 minutes for rare, 20-25 minutes for medium, or 25-30 minutes for well done.
Serve with Greek-style roast potatoes and greens
