Swiss style beef cube roll
1 kg beef cube roll cut, 2 tsp. olive oil, 1 red onion finely sliced, 2 medium carrots peeled and diced, 2 cloves garlic, finely diced, Salt and pepper, 1 can diced tomatoes, 2 tablespoons of tomato paste, 1 cup beef broth, 1 teaspoon of dried oregano
Heat oil in a deep saucepan and add onions and carrots, and sauté until onions are tender. Stir in garlic, tomato paste, beef broth, and oregano and cook 1-2 minutes longer.
Lightly sprinkle all sides of cube roll with salt and pepper and quickly sear in a frypan to seal in the juices.
Place meat on top of onions and carrots. Pour tomatoes over the meat.
Reduce heat to medium, cover and simmer for 1½ hours.
Serve over rice, potatoes, or noodles.
